My girls asked me to make my easy Baked Zucchini Nuggets today.
These yummy treats never last long… it’s more work to make them then the few minutes they take to snack them up.
To make these yummy snacks, you'll need:
1 sliced zucchini
1 cup Panko Bread crumbs
1/4 tsp Paprika
1/2 tsp Garlic salt
1 Tbsp Italian Seasoning
1/4 tsp Black pepper
Now that you have you ingredients out, let's start by washing the zucchini and peeling the outer skin. I like to leave a striping of color with a little of the outer skin showing.
In a bowl, crack your egg and gently whisk.
In a separate bowl, mix Panko Crumbs, and seasoning and mix well.
Take your Zucchini slice and dip in the Egg first, then put in bread crumb bowl and coat both sides with breading. Place on greased baking sheet.
Continue coating all Zucchini slices.
Bake at 375 degrees for 40-50 minutes.
Let cool and serve with your favorite sauce!
This is such a healthy tasty snack, you definitely want to make more than enough, because everyone will want a plate!
